Learn How to Make Meringue

Meringue is finished when it is gold-tinged.

Ingredients

  • 1 tablespoon cornstarch
  • 8 tablespoons granulated sugar, divided
  • 1/2 cup water
  • 3 egg whites
  • Dash of salt

Directions

  • In small saucepan, combine cornstarch, 2 tablespoons sugar and water, and cook over low heat until mixture is clear. Remove from heat.
  • In small bowl, whip egg whites until peaked, then slowly add heated cornstarch mixture. Beat until creamy. Add salt and remaining sugar, and beat until fluffy.
  • Pile meringue on filling in pie crust, and bake at 350 F for 20 to 30 minutes, or until meringue is gold tinged. More from Recipe Box: Recipe Box: Lemon Meringue Pie and More
