Fall means colorful trees, pumpkins, apples, cooler weather … and cookies! This light Ginger Snap cookie will have your family and friends saying, “Oh! It tastes like Fall!”


Ginger Snaps from One Ash Farm Recipes

1 cup sugar
1 cup dark corn syrup
1 cup shortening or lard
1 beaten egg
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1 teaspoon baking soda
4  1/2 cups unbleached flour

Heat the sugar, corn syrup and shortening until well blended. When slightly cooled, add the beaten egg.

Stir in the remaining dry ingredients and mix well.

Drop by large teaspoonful onto a lightly greased cookie sheet. Bake at 400 F until golden and crispy.
