Christmas Lemon Loaf


1 1/2 cups flour
1 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 eggs
2 teaspoons vanilla
1 1/2 teaspoons lemon extract
2 tablespoon butter, room temp
1/2 cup oil
1/3 cup lemon juice

Preheat oven to 350 F, mix all ingredients in a bowl, whisk good at the end to incorporate well. Pour into a 9×5-inch greased bread loaf pan. Bake 45 minutes.

Remove from pan when it has cooled for 20 minutes. Continue to cool. Drizzle top with following icing.

1/2 cup powdered sugar
1 teaspoon lemon juice
1/4-1/2 teaspoon water

Combine until water incorporates and icing drizzles from a knife or fork easily.
