Ingredients
- 1 package (about 1 1/4 pounds) ground chicken or chicken breast, or ground turkey or turkey breast
- 1/4 cup frozen chopped onions
- 2/3 cup Italian-style breadcrumbs
- 2 eggs
- 1/2 teaspoon minced garlic
- 1/2 cup fancy-style grated cheddar cheese
Directions
- Heat oven to 350°F. Spray 12-cup muffin pan with nonstick cooking spray; set aside.
- In large bowl, mix together all ingredients. Fill muffin cups with a scant 1/2 cup meatloaf mixture.
- Bake for 25 to 30 minutes.
