Mary Evans of Kirbyville, Texas, asked for help locating a recipe for a sugar-free pecan pie.
Grace Potter of Nashoba, Oklahoma, sent a version that sounds simply delicious.
Sugar-Free Pecan Pie Recipe
3 ounces light cream cheese
1 stick butter
1 cup flour
6 teaspoons brown sugar substitute
1/2 to 3/4 cup sugar-free pancake syrup
1 teaspoon vanilla
1 tablespoon butter or margarine
1 1/2 to 2 cups chopped pecans (chop fine if using muffin tins)
Heat oven to 375 degrees Fahrenheit.
For pastry, mix together cream cheese and butter. Add flour and knead well. Divide dough into 24 small balls and press into small muffin tins. (Dough can also be pressed into 8- or 9-inch pie plate.)
For filling, combine all ingredients in mixing bowl. Pour filling into pastry. Bake 18 to 20 minutes. Freezes well. Yields 24 servings.
