Ingredients
- 2 cups dry brown rice
- 2 tablespoons lard, olive oil, or butter, plus more for sautéing
- 1 onion, diced
- 1 bell pepper, diced
- 1 pound cooked black beans
- Salt, black pepper, and garlic, to taste
- Meat of choice, such as hamburger, bacon, or sausage, cooked and crumbled (this is an optional ingredient, but it’s a great way to use leftovers)
Directions
- Add dry rice, 4 cups water, and 2 tablespoons lard to a large pan. Bring to a boil, and then reduce heat and simmer with the lid on for 45 minutes, or until rice is tender. Alternatively, cook rice in an electric pressure cooker for 15 minutes.
- In a large skillet or pot, heat enough lard to cover the bottom of the pan. Add onion and pepper, and fry until translucent. Add cooked rice, and fry until the bottom forms a crust. Gently break up rice and allow all rice to lightly fry. Add beans and seasonings. Stir, and then cook over low heat for an additional 10 minutes, allowing flavors to meld. If using meat, add it and allow to warm.
