Ingredients

  • 1 cup butter, room temperature
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups oatmeal
  • 1 cup shredded coconut
  • 2 cups crispy rice cereal

Directions

  • Preheat the oven to 350 degrees.
  • Cream the butter and sugars in a large mixing bowl.
  • Add the eggs and vanilla and beat until fluffy.
  • Mix in the flour, baking powder, baking soda, oatmeal, coconut, and cereal.
  • Drop batter by tablespoons onto an ungreased cookie sheet.
  • Bake for 10-12 minutes or until set.
