Oatmeal Cake Recipe With Coconut and Walnut Frosting

Coconut and walnuts top oatmeal cake.

Ingredients

  • 1 stick margarine
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup rolled oats
  • 1-1/4 cups boiling water
  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla

Topping:

  • 1/2 stick margarine
  • 1 cup brown sugar
  • 1/3 cup cream
  • 1 cup flaked coconut
  • 1/2 cup chopped walnuts

Directions

  • Preheat oven to 350 F. Grease 9-by-13-inch baking dish; set aside. To make cake:
  • In large mixing bowl, mix cake ingredients in order given.
  • Pour batter into prepared dish. Bake for 35 to 40 minutes, or until done. Cool completely. To make topping:
  • In saucepan, combine all topping ingredients. Bring to a boil, and boil for 2 minutes. 5 Pour topping over cooled cake, and spread evenly to cover.
