Coconut and walnuts top oatmeal cake.
Ingredients
- 1 stick margarine
- 1 cup brown sugar
- 2 eggs
- 1 cup rolled oats
- 1-1/4 cups boiling water
- 1-1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
Topping:
- 1/2 stick margarine
- 1 cup brown sugar
- 1/3 cup cream
- 1 cup flaked coconut
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350 F. Grease 9-by-13-inch baking dish; set aside. To make cake:
- In large mixing bowl, mix cake ingredients in order given.
- Pour batter into prepared dish. Bake for 35 to 40 minutes, or until done. Cool completely. To make topping:
- In saucepan, combine all topping ingredients. Bring to a boil, and boil for 2 minutes. 5 Pour topping over cooled cake, and spread evenly to cover.
