Ingredients
- 1 cup cooked navy beans
- 1/2 cup butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups quick oats
- 1 cup chocolate chips
Directions
- 1. Preheat oven to 375 F. Grease cookie sheet; set aside. In food processor, purée beans until thick. Measure 1 cup puree and, in mixer, cream with butter and sugars. Stir in eggs and vanilla. Add remaining ingredients, and blend well.
- Drop dough by tablespoonfuls onto prepared cookie sheet. Bake for about 16 minutes, or until golden brown. Cool on wire rack.

Beans and Ice Box Cookies
Sheila Jones, Foster City, Michigan, hopes someone has a recipe for ice box cookies that includes navy beans. Her lost recipe was originally found on a calendar of recipes from employees of USF Trucking, a company in Holland, Michigan.
We didn’t receive any recipes that match Sheila’s description exactly, and an Internet search did not yield any such recipes either. The recipes were either ice box cookies or cookies with navy beans, but not both. It is possible that the cookie dough could be refrigerated to make ice box cookies; that may be an experiment for Sheila.
