Ingredients
- 2 tablespoons Dijon mustard
- 3 tablespoons butter, softened to creamy consistency
- 1 tablespoon mayonnaise
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 8 to 10 slices tenderized turkey breast
- 3/4 cup breadcrumbs
Directions
- Preheat oven to 375 F.
- Mix butter, mustard, mayonnaise, and seasonings in a bowl until well-combined.
- Place turkey slices 1 layer deep in a cast-iron skillet. Spread mustard mixture over slices. Sprinkle breadcrumbs over top.
- Cover, and bake for 25 minutes. Remove cover, and bake additional 10 to 15 minutes.

In our opinion, the Dijon mustard “makes” this recipe. Serve turkey over grits with peas for a down-home meal.
How to Tenderize Turkey Breast
Tenderizing wild turkey breast and keeping it from drying out can be a challenge. This is especially true when Bruce has bagged a 3- or 4-year-old gobbler. To remedy this, I take a few moments to prepare the meat so it’s tender and juicy every time. The day before cooking, I slice raw turkey breasts across the grain into slices about 3/4 inch thick. Then, I use a meat tenderizer with needle-like projections to pound the slices thinner and help break down the meat. Next, I place these slices into a flat dish and cover them with buttermilk. Enzymes in the buttermilk aid in breaking down meat. I leave the turkey in the refrigerator to soak overnight. The following day, I drain the buttermilk, rinse the turkey slices in cold water, and pat them dry prior to using in a recipe.
