My favorite recipes on the homestead are the easy ones. I had some broccoli that I wanted to add to a simple recipe so I came up with this easy chicken and rice recipe using ground chicken. This is what I made, but of course, it can easily be adjusted to accommodate your taste. I never actually measure my seasonings. I usually just wing it.
Ingredients for Easy Chicken, Broccoli and Rice Recipe
1 lb ground chicken
1 cup brown rice
2 cups organic low sodium chicken broth
1/2 purple onion
4 cloves garlic
2 Green Fresno peppers
garlic powder
onion powder
coriander
black pepper
cayenne
Himalayan pink salt

Using my trusty rice cooker, I used one cup of brown rice and two cups of chicken broth. I also added some garlic powder, onion powder and a little coriander. I sautéed the onion and garlic in olive oil while the rice was cooking. I then added a couple of green Fresno peppers from our garden before adding the ground chicken.
I seasoned the chicken with a little pepper, coriander, garlic powder, cayenne, and Himalayan pink salt. While the chicken was cooking, I cut up the broccoli. My rice cooker has a steamer added to it, so I put the broccoli in the steamer for 10 minutes.
Once everything was cooked, I added a little olive oil to the bottom of a large serving bowl, mixed the broccoli with it, and added a little more Himalayan pink salt. I then put in the rice and mixed it up with the broccoli. The second to the last step was to add the ground chicken and mix it all together. The taste test is the final thing.
