Ingredients
- 2 tablespoons fat (butter, olive oil, or tallow)
- 1 onion, chopped
- 1 cup chopped carrots
- 4 cups cooked chicken, cubed (white or dark meat or turkey)
- 4 cups cooked egg noodles
- 1 teaspoon chili powder
- 2 quarts chicken broth
- 2 cups shredded cheese
Directions
- Melt fat in a heavy, oven-safe pot over medium heat.
- Sauté onions and carrots until slightly golden.
- Add remaining ingredients except for the cheese, and mix well.
- Cover and bake for 1 hour at 350 F.
- Add cheese, stir, and then bake uncovered for 15 minutes.
- Serve with hot biscuits.
Tip: To make this low-carb, substitute the egg noodles with spaghetti squash or hearts of palm noodles.
