Cheesy Chicken and Egg Noodle Casserole Recipe

Ingredients

  • 2 tablespoons fat (butter, olive oil, or tallow)
  • 1 onion, chopped
  • 1 cup chopped carrots
  • 4 cups cooked chicken, cubed (white or dark meat or turkey)
  • 4 cups cooked egg noodles
  • 1 teaspoon chili powder
  • 2 quarts chicken broth
  • 2 cups shredded cheese

Directions

  • Melt fat in a heavy, oven-safe pot over medium heat.
  • Sauté onions and carrots until slightly golden.
  • Add remaining ingredients except for the cheese, and mix well.
  • Cover and bake for 1 hour at 350 F.
  • Add cheese, stir, and then bake uncovered for 15 minutes.
  • Serve with hot biscuits.
