Ingredients

  • 6 eggs, whisked
  • 1/2 cup milk
  • 2 cups shredded cheese (divided into 1-cup portions)
  • 4 cups cooked and crumbled bacon or sausage (or combo)
  • 1 onion, chopped
  • 1/2cup chopped sweet peppers (optional: add 1 chopped jalepeno)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Combine eggs, milk, 1 cup cheese, meat, onions, peppers, salt, and pepper.
  • Pour into a greased 9-by-13-inch casserole dish.
  • Bake at 375 F for 20 minutes or until an inserted knife comes out clean.
  • Top with remaining cheese and bake for an additional 5 minutes or until the cheese is melted.
