I know that for some of you, it’s been way too hot to even think about turning on the oven.But here in Calgary, it’s been cool and rainy…REALLY rainy, and that’s got me thinking about comfort food.Of course, chocolate brownies always fit the comfort food bill for me – how about for you?This particular recipe has a little twist which makes them even more special.
Chocolate Avocado Brownies
1 cup all-purpose flour
1/4 cup whole wheat flour
1 teaspoon baking powder
Pinch of salt
2/3 cup cocoa
1/4 cup vegetable oil
2 small ripe avocados, peeled and mashed (about 1/4 cup)
1/4 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
1/3 cup milk
1 cup chocolate chips
Preheat oven to 350 degrees Fahrenheit.Grease a 9″ square baking pan.
In a medium bowl, combine flours, baking powder, salt, and cocoa.
In a large bowl, mix vegetable oil, sugars, and vanilla.Add dry ingredients and stir, then add milk and mix thoroughly.Spoon into prepared pan.Sprinkle chocolate chips evenly on top.
Bake in preheated oven for 25-35 minutes, or until a toothpick inserted in the centre comes out clean.
