Build a Better Burger
Portobello mushrooms are an efficient and tasty way to please everybody in the family or at a party. Anybody can use this portobello burger recipe, and meat-eaters love the mushroom on their meat patties. My friend Jennifer adapted this recipe from Cook This, Not That! Kitchen Survival Guide.Â
Red Pepper Mayonnaise, recipe follows
Portobello caps
Olive oil
Balsamic vinegar
Salt and pepper
Mozzarella cheese slices
Red onion slices, optional
Hamburger buns, toasted
Mixed greensÂ
Prepare Red Pepper Mayonnaise; set aside for flavors to blend.
Over medium-high heat, heat large nonstick skillet or fire up grill.
Rub portobello caps with olive oil, balsamic vinegar, Italian seasoning, salt and pepper. Grill 2 to 3 minutes, then flip. Immediately add cheese and grill until cheese melts. Grill some red onion slices to add to burger.
Each burger should have a bun, a handful of mixed greens, grilled onions, portobello and Red Pepper Mayonnaise.Â
Red Pepper Mayonnaise:
2 tablespoons lemon juice
1?2 cup mayonnaise
1?4 cup chopped roasted red peppers
1 clove garlic, crushedÂ
Mix all ingredients well.Â
