Rachel Hunt’s Mock Apple Pie Recipe
Pastry for two-crust 9-inch pie
36 Ritz Crackers, coarsely broken (about 1 3/4 cups crumbs)
2 cups water
2 cups sugar
2 teaspoons cream of tartar
2 tablespoons lemon juice
Grated rind of 1 lemon
2 tablespoons margarine
1/2 teaspoon ground cinnamon
Heat oven to 425°F.
Roll out half of pastry and line 9-inch pie plate. Place crackers in prepared crust.
In saucepan, over high heat, bring water, sugar and cream of tartar to a boil; reduce heat and simmer for 15 minutes. Pour over crackers in pie plate. Sprinkle with lemon juice and rind; cool. Dot with margarine and sprinkle with cinnamon.
Roll out remaining pastry; place over filling. Trim, seal and flute edges. Slit top crust to allow steam to escape.
Bake for 30 to 35 minutes, or until crust is crisp and golden brown. Cool completely.
