Grace-Marie Hackwell’s Mock Apple Pie Recipe
Pastry for 2-crust pie
16 soda crackers
Cinnamon
Butter
1 1/2 cups sugar
1 1/2 cups water
1 heaping teaspoon cream of tartar
Heat oven to 450°F.
Line pie pan with regular pie crust.
Break crackers into 2 or 3 pieces each and place in crust. Sprinkle with cinnamon, to taste, and dot with butter.
In saucepan, bring to a boil sugar, water and cream of tartar. Pour syrup over crackers.
Add top crust and bake for 15 minutes. Do not overbake.
