Hot Chocolate Soufflé Recipe

Prep Time: 20 minutes
Cook Time: 40 to 50 minutes

1/2 cup sugar, divided
1/3 cup unsweetened cocoa powder
1/4 cup all-purpose flour
1/8 teaspoon salt
1 cup milk
1/2 teaspoon vanilla
4 egg whites, room temperature
1/2 teaspoon cream of tartar
4 egg yolks

Heat oven to 350°F.

In medium saucepan, mix together 1/4 cup sugar, cocoa powder, flour and salt; gradually whisk in milk until smooth. Cook over medium heat, stirring constantly, until mixture thickens and boils. Stir in vanilla. Remove from heat.
