We’re in full “zucchini season” mode here in southern Alberta, and I’ve been having lots of fun baking and cooking with this versatile (and plentiful!) summer squash.
I’m not sure if you’d classify these bite-sized zucchini snacks as quiches or pastry-less tarts – either way, they are great after work or school or packed into a lunchbox. They’d make a quick, easy side dish for supper, as well. You can enjoy them hot or cold.
Savory Zucchini Bites
Yields about 12 bites.
1 cup grated zucchini, peeled, drained
1/4 cup shredded Parmesan cheese
1 medium egg
1/4 cup wheat bran
Salt and pepper, to taste
Combine all ingredients in small bowl. Drop by teaspoonfuls into greased mini-muffin pan. Bake at 400 F for 20 minutes.
