Recipe Box: Making Dipping Sauces and Using Bread Starter
Recipe for Cornbread
Yields 16 pieces
1 cup Amish Friendship Bread Starter
1 1/2 cups milk
2 teaspoons sugar
1/2 cup all-purpose flour
1 1/2 cups cornmeal
1/4 cup oil
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
Preheat oven to 425 F. Grease 8-by-8-inch baking pan; set aside.
In large bowl, combine starter, eggs, milk, sugar, flour and cornmeal. Beat at medium speed for 2 minutes. Add oil, baking soda, salt and baking powder. Mix well.
Evenly pour batter into prepared pan. Bake for 25 minutes.
NOTE: Be sure to watch this bread carefully to prevent over browning. This yummy recipe for cornbread can be made into a meal by adding some black beans, grated cheddar cheese, corn kernels and chopped jalapeño peppers.
