How to Make Cream Soup

Ingredients

  • 2 tablespoons preferred fat
  • 1/4 cup diced onion
  • 1/2 cup diced mushrooms
  • 1/2 teaspoon salt
  • 1 pint broth of choice
  • 4 ounces heavy cream or cream cheese

Directions

  • In a heavy pot, melt fat over medium heat.
  • Sauté onion and mushrooms until onion is translucent.
  • Add in salt and broth, and then simmer for 5 minutes.
  • Purée with an immersion blender.
  • Add in heavy cream or cream cheese. Stir and heat through.

Cream cheese, heavy cream, shredded cheese, flour, leftover mashed potatoes, and rice all make excellent thickeners. I use either hard white wheat or spelt in my recipes, but you may use your preference.
