Ingredients
- 2 tablespoons preferred fat
- 1/4 cup diced onion
- 1/2 cup diced mushrooms
- 1/2 teaspoon salt
- 1 pint broth of choice
- 4 ounces heavy cream or cream cheese
Directions
- In a heavy pot, melt fat over medium heat.
- Sauté onion and mushrooms until onion is translucent.
- Add in salt and broth, and then simmer for 5 minutes.
- Purée with an immersion blender.
- Add in heavy cream or cream cheese. Stir and heat through.
Cream cheese, heavy cream, shredded cheese, flour, leftover mashed potatoes, and rice all make excellent thickeners. I use either hard white wheat or spelt in my recipes, but you may use your preference.
