Holiday Salad Recipe From Poland
2 to 3 herring, diced
2 dill pickles, chopped
2 onions, chopped, or 1 bunch scallions, chopped
2 cups home-cooked or canned navy beans or pea-beans, drained
2 cups diced cooked potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 heaping tablespoon capers
Mayonnaise
Sour cream
Salt and pepper, to taste
Lemon juice
Sugar
In large bowl, combine herring, pickles, onions, apples, beans, potatoes and peppers. Add capers for a gourmet touch. Toss gently.
Make sauce by combining 1 part mayonnaise and 1 part sour cream. Season to taste with salt, pepper, a little lemon juice and a couple pinches sugar.
NOTE: Dieters may prepare sauce from low-fat or no-fat yogurt and part light mayonnaise. Feel free to alter the amount of individual salad ingredients according to personal preference and availability.
