4 SERVINGS

Ingredients

  • 4 apples
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 to 2 tablespoons butter

Directions

  • Preheat oven to 350 F.
  • Core apples but leave the peel on. Place the apples in a baking pan large enough to hold apples and some water.
  • Mix brown sugar and cinnamon together, and then fill the cored apples with it. Add a sliver of butter to each apple, and then fill baking pan with 1/4 inch of water.
  • Bake for 40 minutes, checking halfway. If you can pierce the apple skin with a paring knife, then it’s ready. Enjoy.

My mother, Shirley Benner, was a great cook and could turn basics into the best meals ever. And with five kids, all we ever had were the basics. She often made baked apples in fall; this is how she did it and how I still do it. You can use any kind of apple you have on hand, but harder varieties, such as Red Delicious or Honey Crisp, will work best.

Remember, recipes are just guidelines. Feel free to change things up. Take advantage of the cool weather and the bounty the land provides. Get cooking, and get the entire family involved.

For me, fall means stews, hearty soups and chowders, fresh bread, pies, and the following recipes. I love to use ingredients that are abundant and in season. Please feel free to make each of these dishes your own.
