For Beet Hunger, Not Your Wallet Sammich:
• potatoes (about 2-4 depending on size)
• kale
• black beans
• beets
• Himalayan garlic salt
• extra virgin olive oil
Preheat oven to 400 F.
Peel and dice potatoes and boil beets.
Cook and mash potatoes, then put in a pan (I use silicon but you can use tin or whatever).
Brush on olive oil and put potatoes into oven (this is your bread).
When potatoes are crispy and don’t fall apart when you take them out, put kale on.
Put back in oven for 10 mins.
While you are doing this, mash beans and put Himalayan garlic salt on them.
Take bread out and put beans on it.
Put back in for 10 mins.
Take sammich out and put cheese and beets on it.
After about 10 mins or desired brownness, take out, put on your other “bread” (potatoes) and BOOM! You got you a nice big, Southern SAMMICH! (without all the grease and guilt).
