Ah, summer! We had an unusually warm and dry June (that’s usually our rainy month) here in southern Alberta, and we’ve transitioned into a super hot July. Although the garden could use a bit more moisture, it has been a pleasure being able to get out and enjoy these long sunny days.
Hot weather calls for cold drinks, and if you want to add a little zip to your water and use up some of that fresh basil you’ve got growing, here’s a delicious option:
Basil Lemon Refresher
Juice of 1 lemon
5 to 10 large basil leaves
1 tablespoon sugar or honey (you can omit the sweetener if you prefer)
16 ounces sparkling water
Ice
In food processer, place lemon juice, basil leaves and sweetener. Pulse until thoroughly mixed, then pour into two tall glasses partly filled with ice. Top off each glass with 8 ounces of cold sparkling water and stir with stick. Enjoy!
