Agave Sweetened Fig Jam
6 cups figs, crushed and chopped
2 lemons
1 cup unsweetened, unfiltered apple juice
1 box pectin, without sugar
Place chopped figs in large pan.
Zest one lemon and set zest aside; cut and squeeze zested lemon to make 1/2 cup juice. Slice second lemon (including rind) into 1/8-inch-thick slices and cut slices into 8 triangles.
Add lemon zest, lemon juice and lemon slices to figs. Stir apple juice and pectin into fig/lemon mixture.
Bring to a rolling boil, stirring constantly. Continue to stir and boil 3 minutes. Remove from heat. Stir in sweetener. Stir until foam is absorbed.
Pack into clean jars. Wipe rims of jars with clean, wet cloth. Seal. Process in hot water bath or pressure cooker according to manufacturer’s directions. Yields 6 to 8 8-ounce jars.
