
Make an easy pork kabob marinade recipe to enjoy with fried okra and orzo covered in garlic herb butter.
Southern food will always have a place in my kitchen. I grew up in California but spent many summers in Arkansas, where I became well-rounded in outdoor cooking and Southern flavor. To this day, I’m a sucker for full-flavor Southern meals and a good cookout. I sure hope this combo makes your mouth water and your family and friends enjoy the good ol’ home cooking the way it should be: bursting with flavor. Y’all enjoy!
Ingredients
- Marinade: 3 tablespoons avocado oil
- 1 teaspoon lemon zest
- Fresh juice from half a lemon
- 2 tablespoons raw local honey
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped fresh curly parsley
- 1 tablespoon chopped fresh cilantro
- Kabobs: 1 pound pork tenderloin cut into 1-inch cubes (you can use boneless pork chops in place of a tenderloin, if needed)
- 1-1/2 cup cubed pineapple
- 1 cup cubed mango
- 1/2 red onion, cut into 1-inch chunks.
- 1 red bell pepper and 1 orange bell pepper, cut into 1-inch squares
Garlic Herb Butter
- 1 pound butter, softened
- 6 cloves garlic, minced
- 1/2 cup each chopped fresh curly parsley, thyme, and rosemary
Directions
- In a medium mixing bowl, whisk together all marinade ingredients.
- Marinate pork cubes for 40 to 60 minutes in the refrigerator.
- While pork is marinating, soak the skewers in water (this will help prevent burning), and prepare your pineapple, mango, onion, and bell peppers.
- Remove the pork from the fridge. Thread pork, pineapple, onion, mango, and bell peppers onto skewers. Alternate pork, vegetables, and fruits until the desired amount is on each skewer (I like to have 3 or 4 pieces of pork per kabob).
- Grill kabobs over medium-high heat for 5 minutes on each side.
- Pork should reach an internal temperature of 160 F.
- Remove and serve with fried okra and orzo covered in garlic herb butter.
- Garlic Herb Butter: In a medium-sized bowl, mix all ingredients until well-blended.
- Once blended, scrape the butter onto a sheet of parchment paper. Roll into a log and twist ends. Refrigerate until ready to use.
