Rhubarb Streusel Pie Recipe
Streusel:
1/3 cup flour
1/2 cup sugar
2 tablespoons melted butter
Pie:
1 9-inch pie crust
1/2 cup sugar
1/2 cup flour
3 cups chopped rhubarb (12 to 14 ounces)
1 can (14 ounces) sweetened condensed milk
Heat oven to 425°F.
For the streusel: Combine flour and sugar. Stir in melted butter to resemble coarse meal. Set aside.
For the pie: Line 9-inch pie plate with pie dough.
Combine sugar and flour. Sprinkle about 1/3 of mixture on dough. Layer on rhubarb. Sprinkle with remaining flour and sugar mixture. Pour sweetened condensed milk over all.
Top with streusel. Bake for 30 to 40 minutes, or until well-browned and bubbly. Rhubarb Streusel Pie yields 8 servings.
