Rhubarb Roly Poly Recipe
2 cups flour, sifted
2 teaspoons baking powder
1 teaspoon salt
1 cup plus 2 tablespoons sugar
4 tablespoons shortening
3/4 cup milk
2 cups cut-up rhubarb
Butter
Heat oven to 350°F.
Sift together flour, baking powder, salt and 2 tablespoons sugar. Cut in shortening. Add milk to make soft dough.
Knead on slightly floured board and roll 1/8-inch thick. Spread with rhubarb, dot generously with butter, sprinkle with remaining sugar, and roll like a jelly roll. Bake for 30 to 40 minutes.
Serve with cream or Hard Sauce Recipe. Yields 6 servings.
Hard Sauce Recipe
4 tablespoons butter
1 cup confectioner’s sugar
1/8 teaspoon salt
1 tablespoon heavy cream
1 teaspoon vanilla, rum, whisky or brandy
Cream butter thoroughly; add confectioner’s sugar gradually and cream together until fluffy. Add salt, cream and vanilla, beating well. Yields about 3/4 cup.
