I thought of my dear mother’s Rhubarb Crunch Recipe that she used to make when I was growing up. We had a neighbor across the street who grew rhubarb and would bring a big bunch to Mama each year. Mama cooked it a variety of ways, but this is the recipe I liked best.”

Rhubarb Crunch Recipe
4 cups diced, raw rhubarb
1/2 cup plus 4 tablespoons flour, divided
1 1/2 cups granulated sugar
1/2 cup brown sugar
1/2 cup rolled oats
1/2 cup margarine
Heat oven to 300°F.
Arrange rhubarb in greased baking dish. Combine 4 tablespoons flour and granulated sugar; sprinkle over rhubarb.
Combine remaining flour, brown sugar, oats and margarine; leave mixture in crumbs. Sprinkle crumbs over rhubarb.
Bake for 40 minutes. Serve warm.
