Barbara Bowman, Arkansas City, Kansas, remembers visiting her great-aunt who always had a pie waiting. Barbara’s favorite was the Rhubarb Cream Pie Recipe, and she’s tried to duplicate the recipe numerous times without success.
Irene Beckler, Hutchinson, Kansas, writes, “My mother made the best Rhubarb Cream Pie. When the grandchildren would come to visit, they always hoped she made the pie. To this day they still talk about her delicious pie.”

Rhubarb Cream Pie Recipe
1 cup sugar
2 tablespoons (a little heaping) flour
1 cup cut-up rhubarb, small pieces
1 cup cream
1 pie shell, unbaked
Heat oven to 400°F.
Mix together sugar and flour. Stir in rhubarb and cream until sugar is dissolved.
Pour into pie shell and bake for 20 minutes. Reduce oven temperature to 350° and bake for an additional 25 minutes. Check pie, and continue cooking, reducing heat more, until cream looks glossy.
