Pickled Mushrooms Recipe With PeppercornsÂ
1/2 pound mushrooms
1/4 cup dry white wine
1/4 cup cider vinegar
1/2 cup water
3 black peppercorns
1 bay leaf
2 garlic cloves, minced
2 tablespoons minced onion
1 teaspoon salt
Clean mushrooms, halving them if large.
In stainless steel pot or other nonreactive pan, combine all ingredients. Bring to a boil over high heat, and cook for 5 minutes.
Reduce heat to low, and simmer for an additional 15 minutes.
Cool and refrigerate overnight. Yield 4 to 6 cocktail portions. Will keep in refrigerator about 7 days.
