Mini Meatloaf with Oatmeal

Put a new spin on an old favorite with a hearty, healthful Moist Mini Meatloaf with oatmeal.
Cooking with Oats
Moist Mini Meatloaves
1 1/2 pounds lean ground beef
3/4 cup quick or old-fashioned oats
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup chopped onion
1 can (8 ounces) tomato sauce
1 egg, beaten
1 tablespoon prepared mustard
Heat oven to 350°F.
Combine all ingredients in large bowl, mixing thoroughly with fork or hands.
Shape into 6 individual loaves. Place in shallow baking pan. Bake for 30 to 45 minutes, or until juices run clear.
Meatloaves may be topped with ketchup, spaghetti sauce or cheese for last 10 minutes of baking.
Variation: Meat mixture may be shaped into 1-inch balls, browned in skillet and simmered for 30 minutes in 1 jar spaghetti sauce, then served over cooked pasta.
