Focaccia Pizza Crust Recipe

2 1/4 teaspoons active dry yeast
1 1/2 teaspoons honey
1 cup lukewarm water
2 1/2 cups unbleached all-purpose flour, divided
1 tablespoon extra-virgin olive oil
3/4 teaspoon kosher or sea salt

Combine yeast, honey and water in bowl of a stand mixer. Add 1/2 cup flour and mix well using rubber spatula.

Cover with a towel and let rest in a warm place for 30 minutes.
