Sunday Chicken Stew
3 pounds chicken, cut up and skinned
Flour/salt/pepper/garlic powder mix, proportions to taste
Olive oil
3 cups chicken broth
Carrots, cut into 1-inch pieces
Celery, sliced
Onion, sliced
1 teaspoon dried rosemary
1 1?2 cups frozen peasÂ
Dumplings:
1 cup all-purpose flour
2 teaspoons baking powder
1?2 teaspoon salt
1?2 teaspoon rosemary
1 egg, slightly beaten
1?2 cup milkÂ
Coat chicken pieces with flour mixture. In large skillet, brown chicken in oil; remove and keep warm.
To skillet, add broth and bring to a boil.
In slow cooker, layer carrots, celery and onion. Sprinkle with 1 teaspoon dried rosemary. Add chicken pieces and broth. Cover and cook on Low for 6 to 7 hours.
For dumplings, combine dry ingredients in bowl. Combine egg and milk in separate bowl, then stir into flour mixture. Set aside.
Stir frozen peas into mixture in slow cooker. Drop in dumplings by heaping teaspoonfuls, and cook on High for an additional 25 to 30 minutes, or until toothpick inserted in dumplings comes out clean.
