Alice Stille, Alhambra, Illinois, sends a sweet pickle Cucumber Relish recipe that sounds pretty darn good. She writes that she gets requests for the recipe all the time.Â
Cucumber Relish
Cucumbers
Ice
1/2 cup salt
8 small white onions
2 seeded peppers
5 cups vinegar
5 cups sugar
1/2 teaspoon turmeric
1/2 teaspoon ground cloves
2 teaspoons mustard seed
1 teaspoon celery seedÂ
Wash cucumbers and remove seeds. Grind enough to make 1 gallon. Drain, then prepare 1 quart crushed ice. Mix ice and salt with cucumbers. Place in refrigerator for 3 hours, or overnight. Drain.
Grind together onions and peppers.
Make syrup with vinegar, sugar, turmeric, cloves, mustard seeds and celery seeds. Add vegetables. Heat slowly with very little stirring. Scald, but don’t boil. Put into jars and seal at once.
Yields about 10 pints.
