Chocolate Covered Bacon Recipe

Heat oven to 350°F. Place bacon on a rack on top of a baking sheet (so grease will drip down and not drown bacon). Start checking for doneness after 20 minutes, but it can take up to 35 minutes depending on thickness of your bacon and your oven. You want the bacon to be crisp but chewy, and curled — not crunchy to the point that it crumbles easily. Blot up excess grease with paper towel and allow to cool for a few hours.

Melt some semi-sweet or bittersweet chocolate chips in double-boiler, and stir until smooth. Dip bacon, one slice at a time, into melted chocolate and thoroughly coat. The chocolate will be a little thick, so use a rubber spatula to scrape away the excess. Place dipped slices on clean drying rack to harden.

Chocolate-covered bacon will undoubtedly put a big smile on your sweetie’s face. Now there’s no need to run to town for a heart-shaped box of candy.
