Chocolate Chip Pudding Cookies Recipe
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 cup butter or margarine, softened
3/4 cup firmly packed light brown sugar
1/4 cup granulated sugar
1 package (4-serving size) vanilla instant pudding mix
1 teaspoon vanilla extract
2 eggs
1 package (12 ounces) chocolate chips
1 cup chopped nuts, optional
Heat oven to 375°F.
In bowl, combine flour and baking soda.
In large bowl, combine butter, sugars, pudding mix and vanilla extract. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture; stir in chocolate chips and nuts. Batter will be stiff.
Drop batter by teaspoonfuls about 2 inches apart onto ungreased baking sheets. Bake for 8 to 10 minutes. Yields 7 dozen cookies.
