Aunt Gussie’s Relish
4 cups onion
4 cups cabbage
4 cups green tomatoes
4 cups red and green pepper
1/2 cup salt
1 tablespoon celery seed
2 tablespoons mustard seed
1 1/2 teaspoons turmeric
4 cups vinegar
2 cups water
Grind or finely chop onions, cabbage, tomatoes and peppers before measuring. (Diane uses the old type of grinder that fastens to a table.) Combine and place mixture in large bowl.
Sprinkle salt over vegetables, and cover with foil. Let stand overnight; do not stir. This leaches out the moisture.
Drain and rinse well.
Combine celery seed, mustard seed, turmeric, vinegar and water; add to vegetables. (Diane says she simmers the vinegar mixture alone before adding to vegetables.) Simmer mixture for 3 minutes. Pour into jars and seal. Yields 8 pints.
