Chicken Sandwiches With Lemon-Basil Zucchini Ribbons and Boursin Cheese Recipe
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 lemon, zested and juiced
3 tablespoons chopped fresh basil
2 medium zucchini, sliced very thin lengthwise
1/2 cup thinly sliced red bell pepper
1 package (5 ounces) Boursin cheese
8 slices crusty bread, toasted
3 cups shredded rotisserie chicken
In bowl, combine salt, pepper, olive oil, lemon zest and juice, and basil. Whisk to combine.
Add zucchini and red bell pepper, tossing gently to coat with dressing.
Spread 1/4 of Boursin cheese onto each of 4 slices bread. Cover with 1/4 shredded chicken and top with zucchini and red bell pepper. Drizzle any remaining dressing over the top.
Cover with remaining bread slices. Cut each sandwich diagonally and serve. Yields 4 servings.
