Turkey Chilaquiles Recipe
1 can (10 ¾ ounces) condensed cream of chicken soup
½ cup mild green chile salsa
1 can (4 ounces) diced green chiles, undrained
8 cups slightly crushed tortilla chips, divided
2 to 3 cups cooked, shredded turkey, divided
2 cups (8 ounces) shredded cheddar cheese, divided
Sliced pitted black olives, for garnish
Heat oven to 350°F.
In bowl, combine soup, salsa and chiles; mix well.
In 2- or 2 ½ -quart casserole, place 1⁄3 chips, top with 1⁄3 turkey. Spread 1⁄3 soup mixture over turkey, and sprinkle with 1⁄3 cheese. Repeat layers.
Bake, uncovered, for 15 minutes, or until casserole is heated through and cheese is melted. Garnish with olives.
