Ingredients
- 1 teaspoon salt, divided, plus more for salting pork chops
- 2 tablespoons flour, plus more for flouring pork chops
- 6 pork chops
- Fat, enough to brown pork chops
- 6 medium potatoes
- 1 tablespoon butter
- 3 cups milk
- ½ tablespoon pepper, divided
- 1 tablespoon chopped onion, divided
Directions
- Salt and flour pork chops. Brown them in a skillet with a little fat.
- Pare potatoes and slice thin.
- Combine butter, 2 tablespoons flour, and milk in a saucepan over medium heat to make a thin sauce.
- Put half of the potatoes in a buttered casserole dish. Cover with half of the sauce, half of the salt and pepper, and half of the chopped onion. Add pork chops. Add remaining potatoes, salt and pepper, and chopped onion. Top with remaining sauce.
- Cover and bake in a moderately hot oven (400 F) until tender, about 1 hour. Uncover for the last 15 minutes to brown.
