- 2 cups warm water
- 1⁄4 cup molasses
- 1⁄4 cup honey
- 2 tablespoons apple cider vinegar
- 2 teaspoons ground ginger
- Combine all ingredients, and stir to dissolve molasses and honey. Allow to reach room temperature before serving.
You can use a fine strainer to remove the powdered ginger before serving this classic switchel, although our ancestors weren’t fussy about sediment at the bottom of a jug. Yields 2-1⁄2 cups.
