Ingredients
- 1 cup dried beans or marrowfat peas
- 5 cups water
Instructions
Soak beans overnight. Next morning, drain and then add water. Cover and simmer for 2 or 3 hours, or until tender. Add additional water as needed.
In skillet, sauté onion, parsley, celery, garlic and peppers in oil. Add to beans with thyme, salt, pepper, potatoes, tomatoes, cabbage and macaroni. Simmer for about 30 minutes, adding more water if necessary. Ladle into soup bowls and sprinkle with Parmesan before serving.
