Some of the best vegetables to grow for beginning gardeners are easy-to-grow zucchini and summer squash because they require relatively little care for how much beginning gardeners will get out of them. Tomatoes, peppers and egg plants are also easy to grow and versatile to use while cooking with them.

Lettuce is simple to grow and easily harvested for a quick meal. Root vegetables are also easy to plant, harvest and can be used in a wide variety of recipes in your kitchen.
