Sissy’s Yellow Squash Casserole Recipe
4 to 5 cups cooked, mashed yellow squash
1 medium onion, chopped
2 eggs, beaten
1 package (1.1 ounces) dry ranch dressing mix
1 cup grated cheddar cheese
12 saltine crackers, crumbled
Salt and pepper
Bread crumbs to cover
Mix together squash, onion, eggs, mayonnaise, dressing mix, cheese and crackers. Season with salt and pepper. Top with bread crumbs. Bake at 325°F for about 30 minutes.
Note: I have made the following changes to the original recipe: I sometimes mix zucchini squash with the yellow squash; I cover the casserole with additional cheese instead of bread crumbs; and I bake at 350° instead of 325°.
