Rhubarb Dessert Recipe
5 cups cut-up rhubarb, in 3/4-inch pieces
1 package (3 ounces) raspberry gelatin
1 cup sugar
3 cups miniature marshmallows
1 box white cake mix
Whipped cream, optional
Heat oven to 350°F. Grease 9-by-13-inch baking dish.
Spread rhubarb in prepared baking dish. Sprinkle gelatin, sugar and marshmallows over rhubarb.
Mix cake mix according to package directions; spread batter over rhubarb mixture. Bake for 55 minutes.
Before serving, top with whipped cream, if desired.
