Oatmeal Raisin Cookies Recipe
1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
4 cups old-fashioned oats
1 cup whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup raisins
1 cup chopped walnuts
1 cup flaked coconut
1 cup chopped dates
Heat oven to 325°F.
In mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
In another bowl, combine oats, flour, baking soda, salt and cinnamon. Gradually add to creamed mixture, combining well. Stir in raisins, walnuts, coconut and dates.
Roll dough into 1 1/2-inch balls. Place 2 inches apart on ungreased baking sheets. Bake for 14 to 16 minutes, or until edges are firm. Remove to wire rack to cool. Yields about 3 1/2 dozen cookies.
