Homemade Corned Beef Recipe
4 to 5 pounds beef rump roast or doubled thick-sliced round steak
12 garlic slivers (3 cloves garlic, quartered)
12 whole cloves
1/3 cup tender quick salt
2 cups cold water
Cut pockets in beef and insert garlic slivers and whole cloves.
Place beef in plastic or glass container and cover with brine made of salt and water. Be sure meat is covered with brine. If necessary, make additional brine in like proportions.
Refrigerate for 10 to 12 days.
Drain, remove garlic slivers and cloves, and wash beef with cold water.
Cover with cold water and simmer in large stockpot on stove for several hours, until tender.
Note: This recipe also can be made with venison.
