Here’s a fruit parfait recipe with oatmeal that will satisfy your taste buds breakfast, lunch and dinner.

Oatmeal Fruit Parfait

2 cups cooked, cooled oatmeal, divided
Fresh fruit, chilled (such as sliced peaches or berries)
2 cups vanilla ice cream, divided
Garnishes (nuts, maraschino cherries, toasted oats or granola) 

Using 1 cup oatmeal and 1 cup ice cream for each serving, layer oatmeal, fruit and ice cream in two parfait or other tall glasses.

Garnish as desired. Yields 2 servings.
